Tuition bills are due this week and I'm coping with the stressed out parents and student pretty well. My reward is one or two of these ice cream sandwiches when I get home from work --sort of homemade.

Break apart refrigerated chocolate chip cookie dough, roll the pieces into 24 pre-measured balls, bake and cool. Then scoop a smallish scoop of peanut butter and chocolate ice cream and sandwich the cookies. Cover and freeze. I lined a small, rimmed baking sheet with parchment and covered them with plastic wrap. This would make 12 nice sized (not too big) ice cream sandwiches. I smooshed together two of the cookie dough chunks to make two bigger cookies--realizing later that if (not that anyone would) you ate the ice cream sandwich you would eat 4 cookies in the process.

This was a sample recipe. I needed to make sure they were going to be safe to eat. Definitely safe, and they keep pretty well--or they have so far.

I have to stop going to your blog for awhile, because every time I view it, I want an ice-cream sandwich. Maybe this will pass after Owen is born (Eric doubts it) :)
